International cuisine menu announced for SUNY Adirondack student showcases

GLENS FALLS, New York (Jan. 20, 2026) — This time of year can seem bleak in the North Country, but SUNY Adirondack is giving food lovers an opportunity to escape on a worldwide tour — of cuisine.

Seasoned, the college’s student-run restaurant at 14 Hudson Ave., opens for the Spring semester Feb. 5, to offer lunch Tuesday, dinner Wednesday and international cuisine-themed dinner Thursday.

“Seasoned isn’t just a restaurant — it’s a classroom, a laboratory and a celebration of what our students can do,” said Matthew Bolton, Culinary Arts instructor. “Lunch, dinner and our international menus let students explore technique and creativity, while giving guests an unforgettable dining experience they can feel good about supporting.”

Lunch — with seatings at 11:30 and 11:45 a.m., noon, 12:15 and 12:30 p.m. Tuesday — includes a classic modernized menu prepared by Culinary students. The three-course meal includes an appetizer, entree and dessert, and tea, soda or coffee, for $18.95 plus tax ($9.95 plus tax for those ages 12 and younger).

The three-course dinner — offered at 6, 6:15, 6:30 and 6:45 p.m. Wednesday — also includes an appetizer, entree and dessert. Meals are $30.95 plus tax ($18.95 plus tax for those ages 12 and younger); a cash bar is available for wine and beer.

Second-year Culinary students prepare international cuisine-themed dinner Thursday, with seatings at 5:45, 6, 6:15, 6:30 and 6:45 p.m. The three-course meal in a fine-dining setting includes an appetizer, entree, dessert and soda, coffee or tea. 

The students manage recipes from specific international regions, organizing staff tasks and implementing purchasing, costing and leadership roles in a professional kitchen setting. Students in the dining room management class run front-of-house operations, including waitstaff, bartender, host and manager.

  • Feb. 12: Greece
  • Feb. 19: Hungary
  • Feb. 26: Ireland
  • March 19: India
  • March 26: Australia
  • April 2: Asia
  • April 9: Vietnam
  • April 16: Caribbean
  • April 23: Mexico
  • April 30: Brazil

International cuisine dinners are $30.95 plus tax ($18.95 plus tax for those ages 12 and younger). Wine and beer are available at a cash bar.

Reservations for Tuesday, Wednesday and Thursday meals through April 30 (except March 5, and 10 to 12) are available.

Special events

Seasoned and SUNY Adirondack’s Events Services office host Collaborative Cuisine dinners, in which Chefs Bolton and Dynia Mariano and Culinary students work with regional beverage creators on paired meals. 

The first of the series is a Valentine's Special on Friday, Feb. 13. SUNY Adirondack teams with Victory View Vineyards for this night all about love. Tables for two are available for $180. 

Remaining Collaborative Cuisine events are scheduled March 20, April 17 and May 1. Doors open at 5:30 p.m.; the program, which includes an informal talk from chefs and beverage partners, starts at 6 p.m. Collaborative Cuisine is $80 plus tax per person.
